banana bread with caramelized bananas

 

What could be nicer on a cold winter’s Sunday than cuddle up on the couch with a fragrant cup of tea and a delicious home-made cake.

Sue and Sibylle from Comme Soie have sent us this recipe from a banana bread with caramelized bananas.

This recipe is so easy peasy and you probably already have all the ingredients you need at home anyways. One more bonus: it is healthy and naturally sweet without refined sugar and flour and all the other nasties.

The icing on the cake is the caramelized bananas – that’s how heavenly tastes.

 

 

WHAT YOU’LL NEED

For the banana bread

– 3 (big and very ripe) bananas
– 2 eggs
– 1 tsp coconutoil
– 1 or 2 tbsp agave (depends on how sweet you like it)
– 200g oats
– 150 ml almond milk
– 1 tsp baking powder
– 1 tsp cinnamon
– pinch of salt

 

 

 

1 – Mash up the bananas and mix them well with the eggs, coconut oil and the agave. Add in the remaining ingredients and mix well.

2 – Pour the batter into your lined baking pan and bake for 30-40 minutes at 180°C.

 

 

For the caramelized bananas

– 1 tbsp coconutoil
– 2 bananas
– 1 tbsp brown sugar

 

 

 

1 – Over medium heat melt the coconut oil in a frying pan. Meanwhile slice your bananas and sprinkle them with sugar.

2 – Add the bananas to the pan and caramelize them for about 2 to 3 minutes per side. Remove from pan carefully and serve hot on your ofen warm banana bread.
